  • 2 tablespoons chopped onion
  • 3 tablespoons seeded, chopped Anaheim chile
  • 2 cups seeded and coarsely chopped watermelon
  • 1/4 teaspoon garlic salt
  • 2 tablespoons balsamic vinegar
In a large bowl combine the chopped onion, Anaheim chile, and watermelon. Ensure that the ingredients are thoroughly mixed. In a separate small bowl, combine the garlic salt and the balsamic vinegar. Pour the vinegar dressing over the mixture, stir, and refrigerate. Keep the salsa refrigerated for at least an hour. Serve with chips and enjoy with family and friends.
